Not kidding. Our family really did devour these roasted carrots like candy. I can’t wait for you to put them to the test – and Easter or Ramadan would be the perfect occasion! Not only are they incredibly easy, they taste amazing at room temperature, so they would keep and/or transport perfectly if need be. How to make:
- 1 bag small carrots peeled and trimmed
- 4 tablespoons olive oil
- 4 tablespoons Wildflowers Raw Honey
- salt and pepper to taste
- 1 tablespoon garnish: your choice but make sure it’s fresh herbs
Preheat the oven to 400 degrees.
Place the carrots in a single layer on the baking pan.
In a small bowl, mix together the olive oil, honey, salt and pepper. Pour the honey mixture over the carrots and toss to coat.
Place in the oven and bake for 25-35 minutes or until carrots are tender and browned. Roasting time may vary depending on the size of the carrots.
Remove from the oven and serve immediately, sprinkled with parsley if desired.
